The massive sealing on top of each jar is to keep out the ants, and smell of sugar and to make the honey so stored last many years, I believe up to 10 years without going candy.
@off_grid_living honey’s longevity is amazing, and it has been found to reach millennia without becoming spoiled. That linked article is pretty interesting, and while I probably wouldn’t want to eat from a 1,000 years old honey jar, it sure provides a certain assurance in case of doubt that “that old honey” we might have at home is still fine.
